 Ingredients: 1 stick cannabis butter 1 1/8 cups all-purpose flour 1 tsp cinnamon 1/2 tsp baking soda 1/2 tsp salt 1/3 cup plus 2 tbsp packed light brown sugar 1/3 cup plus 2 tbsp granulated sugar 1 large egg 1/2 tsp vanilla 1 cup coarsely grated carrots (2 medium) 1 cup walnuts (3 oz), chopped 1/2 cup raisins (2 1/2 oz) 8 oz cream cheese 1/4 cup honey Directions: Put oven racks in upper and lower thirds of oven and preheat oven to 375F. Butter 2 baking sheets with the cannabis butter. Whisk flour, cinnamon, baking soda, and salt together in a bowl. Add cannabis butter, sugars, egg, and vanilla in a bowl and beat together for about 2 minutes with an electric mixer at medium speed until pale and fluffy, about 2 minutes. Slowly add in carrots, nuts, and raisins while blending low speed, then add flour mixture and beat until just combined. To form cookies, drop 1 1/2 tbsp batter per cookie 2 inches apart on baking sheets and bake, (at 375F) changing position of sheets halfway through baking While cookies are baking, blend cream cheese and honey in a food processor until smooth. You`ll know cookies are done when they are lightly browned and springy to the touch, which should be 12 to 16 minutes total, depending on your oven. Cool cookies on sheets 1 minute. Do not leave on sheets or the bottoms will scorch. Transfer cookies to racks to cool completely.
